Amaranth is a whole grain dry cereal from Peru. It’s similar to
whole grain oats. There are over 60 varieties of Amaranth. The
name comes from the Greek word Amarantos, meaning one that
does not wither. A tall plant with broad green leaves, this grain is
sweet and has been used for candy making. For this recipe we are
going to boil it in some flavoured water.
