A widow friend of my grandmother’s in small town North Alabama made Apple Cakes for the fall church bazaar. My grandmother’s house was in the valley between 2 mountains and was drafty at best. I remember her toasting next day apple cake with slabs of butter for Sunday breakfast and hot chocolate and eating near her open stove to get warm. This GF version doesn’t have to be toasted — but you’ll find me and the kidlets with buttery fingers on a frosty morning! Make it your grown up frost dessert: warm one 1/4 cup Rum, 1/4 cup honey, 1/3 tsp cinnamon and a squeeze of lemon. Mix and drizzle over warm cake. Top with a dollop of whipped cream. (Best not to do the adult version if you’re fixing to go down to the church. Wouldn’t want to doze off during the sermon!)

- 3/4 cup Pecans chopped
- 3 cups GF all purpose flour Use our blend!
- 2 cups Sugar
- 1 tbs Cinnamon
- 4 apples peeled, cored and sliced
- 1 tbs Baking Powder
- 1 tsp salt
- 4 Eggs
- 1/2 cup Coconut Oil melted
- 1 stick Butter melted
- 1/4 cup Apple Juice
- 1 tbs Vanilla extract
- For Garnish:
- Confectioners’ sugar

- Pre-heat oven to 300°F. Lightly oil a 10 inch spring form pan.
- Combine 2 tablespoons of flour, 1/4 cup of sugar, and 1 teaspoon cinnamon. Toss in apples and nuts, mix well.
- Combine remaining flour, sugar, baking powder, cinnamon and salt. Add eggs, coconut oil (melted), butter, apple juice, and vanilla extract. Mix until batter is smooth.
- Using about 1/3 of apple/nut mixture place apple on the bottom of the pan, being careful to keep a 1 inch border in from the edge of the pan. Pour half of the batter in the pan, place 1/3 more of the apples, top with remaining batter and apples.
- Bake the cake for 30 minutes at 300°F and then turn up the heat to 350°F and bake for 30-45 minutes more until a skewer inserted in the middle comes out cleanly. Allow to cool completely, remove from pan and garnish with powdered sugar.
