  1. Preheat the oven to 375 °F
  2. n a large mixing bowl toss the apple slices with the sugar, lemon juice, cinnamon, and tapioca flour until evenly coated.
  3. Make the crumb topping by combining the ingredients in a medium bowl with your fingers or a fork to resemble a coarse meal.
  4. Begin assembling the pie by layering the apple slices in the prepared piecrust in a circular pattern. Continue layering until all the slices have been used and the filling forms a small mound in the middle. Do not worry that it is way above the edge of the crust, as the apples will cook down considerably. Now, take the crumb topping and, using a handful at a time, press the mixture firmly onto the apple filling, being sure to cover any gaps.
  5. Bake for 50 minutes to 1 hour on the center rack of the oven. Place a baking sheet on the rack below to catch any drips. The pie is done when the topping is golden and a fork inserted in the center of the apples can be removed easily. If the edges of the crust begin to brown too much before the pie is done, cover them loosely with aluminum foil to protect from burning. Let cool at room temperature for at least 1 hour before slicing. Serve warm or chilled.
Notes:
  1. *To make your own piecrust combine 1 cup gluten-free flour blend, 1/4 tsp salt, 1 Tbs sugar and 5 Tbs cold unsalted butter in a food processor. Pulse to sand-like consistency, then add 3 to 4 Tbs cold water until dough comes together. Chill for 20 minutes before rolling out into a 9-inch pie dish. Bake at 350 °F for 8 minutes or use unbaked according to recipe.
