  1. In a medium saucepan, combine 1 1/2 cups of the milk, sugar, cinnamon, and vanilla and bring to a simmer over medium heat, stirring often. Stir in the cooked rice, reduce the heat to medium-low, and cook slowly until somewhat thickened and creamy, about 15 minutes, being careful not to scorch the bottom of the pot by reducing the heat to low, if necessary.
  2. Whisk together the egg yolks and the remaining 1/2 cup milk in a small mixing bowl. In a medium-size mixing bowl, beat the egg whites with an electric mixer until stiff peaks form.
  3. While stirring constantly, slowly add the beaten yolk mixture and butter to the saucepan and cook over very low heat, continuing to stir, for 2 minutes. Remove from the heat, add the beaten egg whites, and fold in gently with a rubber spatula to blend.
