Instructions
  1. Heat the oil in a large nonstick pan over medium-high heat. Season the chicken with salt and pepper and cook in the oil, stirring frequently to lightly brown, about 2 minutes.
  2. Transfer with a slotted spoon to a plate and set aside.
  3. Add the onion and mushrooms to the skillet and cook, stirring often, until somewhat softened and lightly browned, about 4 minutes. Return the chicken with its juices to the pan and add the apple juice, and broth. Stir well and cook for 1 minute over high heat. Cover, reduce the heat to low, and cook until the chicken is firm and no longer pink inside, about 10-14 minutes.
  4. In a small bowl whisk together the milk, mustard, and cornstarch. Stir the mixture into the pan and bring to a simmer. Continue cooking for 2 minutes until the sauce is thick and rich. Taste for seasoning and serve immediately.
