1/2Cupolive oil(or a blend of olive and canola) About 40 corn tortillas or 1 pkg Teff wraps
Start at least 6 hours before meal time (or the night before).
Place tomatoes, spices, onion, garlic, one of the cans of
green chilies and oil in the slow cooker and stir together.
Add chicken & Mexican-style corn, and cook 6 to 8 hours on
At least 1 to 4 hours before you want to eat, remove the
chicken to separate bowl and shred with 2 forks.
Return the meat to the pot.
Stir the creamed corn, black beans and green chilies into the
slow cooker. Simmer until ready to serve. 6 servings.
Tortilla or Teff Strips Topping:
Mix ingredients and lightly brush on both sides of tortillas or Teff
wraps. Slice tortillas in 1/2 inch strips and spread on cookie sheet.
Broil in oven for 5 minutes and stir / turn. Repeat until golden and
crisp watching close to avoid burning.
