These are a great family dish. If you have your act together you can marinate them the night before and just pop out of the fridge when you come in from work. Be sure to double the marinade and store half separately in the fridge. Have the teenager slice up some peppers and onion and skewer with the beef. Have the ten-year-old toss a big salad while hubby mans the grill and you handle the wine screw. Serve on a plated bed of greens (paper will work so the children have fewer dishes to clean up) drizzled with the reserved marinade. Your job is done until they come at you with that homework the school sent! (You are better at long division after dinner and a glass of wine!)

- 3 Tbs olive oil
- 1 1/2 Tbs Red Wine Vinegar
- 1 Lime Juice only
- 1 tsp Chili powder
- 1/2 tsp Paprika
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic powder
- Cayenne Pepper To taste
- Salt and Pepper To Taste
- 1 Pound Beef Chopped into cubes

- 1 Large Zucchini Sliced
- 1 Large Red Bell Pepper Cut into 1 1/2 inch squares
- 1 Large Green Bell Pepper Cut into 1 1/2 inch squares
- 1 Pint Cherry Tomatos
- 1/2 Small Red Onion Cut into 1 inch squares

- In a small bowl, whisk together the olive oil, vinegar, and lime juice. Add in chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper.
- Cut beef into cubes and place in a shallow baking dish. Coat with the sauce, and stir until it is well covered.
- Cover, and marinate in the refrigerator at least 1 hour, preferably longer.
- Preheat the grill for medium-high heat. Thread beef onto skewers. *Optional: Alternate Beef cubes with zucchini, green peppers, red peppers, cherry tomatoes, and red onion
- Discard marinade.
- Lightly oil the grill grate. Grill the beef kebab skewers for 10 to 15 minutes, or until or until beef reaches desired doneness.
- Serve immediately.
