Instructions
  1. Pre-heat oven to 350°F. Prepare a work area with parchment paper, dusting with tapioca flour.
  2. Filling: mix flour with cinnamon and brown sugar. Cut butter into this mixture, forming crumbles.
  3. Stir in pecans and mix well. Set aside.
  4. Dough: in a small cup combine the water with sugar and yeast. Set aside for a few minutes.
  5. In medium bowl, mix the flours, xanthan gum, and salt.
  6. In a large (2 cup) measuring cup, combine eggs, oil, and buttermilk. Mix well.
  7. When yeast is a little foamy on top, add to egg mixture and stir.
  8. Pour yeast and egg mixture into the dry ingredients. Mix well, first with spoon, then with hands.
  9. When dough is very smooth and flexible, dust the top, and begin to roll the dough into a rectangle. If desired, cover with a sheet of waxed paper to prevent any sticking.
  10. When dough is in a rectangular shape about 8 x 12 inches, and 1/2” thick, spread softened butter over dough with a soft spatula.
  11. Sprinkle filling mixture over top of the butter, carefully covering all areas. Save a small amount of this mixture (2 – 3 tablespoons) for later use.
  12. Roll dough to form a tube. Cut tube into 1/2 inch circles.
  13. If desired, sprinkle with a little large granule sugar, to crystallize the tops.
  14. Bake at 350°F for 25 – 30 minutes, or until firm and slightly golden.
