Instructions
  1. In a large pot, boil the chicken for 30-40 minutes. When meat is done, remove from heat.
  2. Allow chicken to cool, then remove skin and bone and set aside. Do not discard the broth, as you will use this for your noodle soup stock.
  3. Cut the cooled chicken into small bits. Return meat to pot.
  4. Add enough water to the pot to equal 8 cups (2 quarts) then bring water to a boil.
  5. Add all remaining ingredients except the noodles and parsley. Simmer 20 minutes.
  6. Add the noodles and stir. Allow soup to simmer for approximately 10 minutes, then serve with crackers, either homemade or from Glutenfree.com. Yields 8 servings at 1 cup each.
Tips:
  1. To shorten the cooking time, try boiling your chicken ahead of time, or substitute 2 cans of white and dark meat chicken for the freshly boiled meat. If you prefer a soup with fewer noodles, decrease the amount of packages you add to the mix.
  2. Corn pasta is a great choice for soups, because it holds it’s shape and texture even after being in liquids for extended periods. Rice noodles are lighter, and traditionally in chicken noodle soups the noodles aren’t as heavy. If you prefer a finer, lighter noodle, try substituting 6 packages Onion Thai Noodles
