Instructions
  1. Heat up the oil and sauté the onions for 2 minutes. Add the rice and sauté 3 to 5 minutes.
  2. Dice the lotus root. Add all other ingredients except the parsley to 4 cups of water. Cover and bring to a boil.
  3. Reduce the flame to medium-low and simmer for 1 hour.
  4. Remove the cover and mix in the parsley.
  5. Coarsely chop the almonds and mix with the rice and parsley.
  6. Serve hot.
