  1. Pre-heat a panini maker according to manufacturer’s instructions.
  2. Heat a tablespoon of the olive oil in a medium pan and add the spinach. Season with salt and pepper and cook until tender, about 2 minutes. Remove with a slotted spoon and set aside.
  3. Make the panini by placing the tomato, mozzarella, American cheese, and spinach on one bread slice, seasoning and drizzling the oil while layering. Top with the second bread slice and grill in the panini maker until the cheese begins to melt and the bread is nicely toasted.
  4. Transfer to a cutting board and slice into two halves with a serrated knife. Serve immediately.
