Instructions
  1. Soften cream cheese on counter or in microwave for 1 minute or less.
  2. Chop all the other ingredients very fine and combine in a small mixing bowl.
  3. Add the cream cheese and olive juice and mix very well.
  4. Place mixing bowl in refrigerator (or freezer) for 30-60 minutes to re-harden cream cheese mixture.
  5. Remove from refrigerator. Form ingredients into a ball (using a spoon or spatula) then transfer to a serving plate. If preferred, us a frosting knife to smooth the ball around the edges. This is only for aesthetics, and not really necessary.
  6. Surround your creation with gluten free crackers, pretzels, chips, or bread of your choice and enjoy! It even tastes wonderful served with chopped vegetables, such as carrots and celery, on the side.
Variations:
  1. Green olives stuffed with pimentos add a little more color to this dish. Try adding a 1/2 teaspoon of garlic powder. If you prefer spicy snacks a 1/4 teaspoon of pure habanero sauce will turn up the heat. Additional dried beef can be added if you wish, but you may want to rinse the beef in warm water and shake dry before mincing to avoid making the final product too salty. This cheese ball is also good served with corn chips.
