  1. Preheat the oven to 350 °F.
  2. In a small saucepan combine the water, lemon juice, apple juice, onion, carrot, parsnip, bay leaf and dill. Bring to a boil over high heat, reduce to low, and simmer for 5 minutes. Remove from heat and set aside.
  3. Place the fillets, skin side down, in a small rimmed baking dish just large enough to hold the fillets without touching. Pour the liquid around the fillets, cover the fish surface with parchment paper that has been lightly brushed with olive oil, and bake, until the salmon is firm, but still moist, about 15 minutes. Remove the cover and let the salmon rest in the liquid for 2 minutes.
  4. To serve, remove salmon from dish with a spatula (skin will come off easily) and transfer to 2 serving plates or, if desired, an airtight container to chill in the refrigerator. Discard the poaching liquid and serve the salmon with the vegetables.
