Instructions
  1. Heat oil in a medium heavy-bottomed pot over medium heat. Add onion and celery, and cook stirring occasionally, until softened, about 5 minutes. Add garlic and cook a further minute.
  2. Stir in tomatoes, stock, and water. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, for 3 minutes.
  3. Add fish and simmer, covered, until shellfish has opened and white-fleshed fish is firm, about 4 minutes. Season with salt and pepper, and serve sprinkled with parsley.
