Gluten Free Pancake Recipe 1

Sunday has always been one of my favourite days. Especially growing up. It might have been the one day that I could sleep in a little longer and lay in my warm bed until the morning sun would fill my room, but it wasn’t like that. Sunday mornings always remind me of the traditional pancake breakfast with my family.

Before the sun could melt me under my covers, the aroma of fresh pancakes being cooked would always wake me. I can remember rushing from my bed to watch my father mix up the next batch of his famous pancakes. I can still hear the whisk furiously stirring against the sides of the glass bowl and I remember watching the bright yellow egg yolk disappear into the fluffy white batter. He would always pour the perfect amount into the frying pan and the distinct sizzle would unleash the potent aroma that got me out of my bed in the first place. I couldn’t wait until everyone else was awake so we could sit down together, lather each delicious pancake with maple syrup and fill our bellies until we were completely satisfied. For me pancakes are something of a comfort food that remind me of my youth.

Like most things, traditions change and when I began to eat gluten free, so did my appetite for Sunday morning pancakes.

It wasn’t until I grew older, went off to college and started to crave those comfort foods. Because I had to eat gluten free it took some time for me to develop my own gluten free pancake recipe. There where many mistakes along the way but over the years I developed a gluten free pancake recipe that reminds me of home and is something I can share with my family today.

Instructions
  1. In a small mixing bowl, combine the gluten free flour, sugar, baking powder, salt and cinnamon. Mix well.

  2. In a medium sized mixing bowl, combine the large egg, vanilla, almond milk and shredded apple until it is thoroughly mixed.
  3. Add the dry ingredients to the wet ingredients in the medium sized mixing bowl. Mix together until you have a fine batter without any clumps.

  4. Pre-heat a frying pan on medium heat. When it is getting close melt a small amount of butter in the frying pan. Coat the pan and make sure it doesn't burn.
  5. Add about 1/4 cup of the gluten free pancake batter mix to the trying pan.
  6. Serve with pure maple syrup or try adding some of the grated cheese for a nice crispy texture.
Recipe Notes

This recipe works out very well for me. :) A couple tips that will help until you get it right are to be sure the butter is melted but not hot. You may also want to make sure the milk is at room temperature and not chilled. If the batter is a little too thick, add a little more milk. It should be able to pour but it shouldn't be runny.

    This sounds great. I am always looking for the perfect gluten free pancake mix. When you say vanilla, do you mean vanilla essence? I wasn’t quite clear. I live in Ireland and myself and my three sisters are coeliac. I have tried some of lovely ideas and they are great. Love to read all the posts. Thanks a mill. Nora
