  1. Pre-heat oven to 350°F.
  2. If using cupcake papers, spay lightly with oil. You can cook these directly in the muffin tin if you prefer, but be sure to spray it as well.
  3. If spinach has thawed, drain off any excess water before adding to your batter.
  4. In a large bowl beat the eggs and add remaining ingredients.
  5. Spoon into muffin tins, 2 tbs each. These will puff up slightly so leave a little room at the top.
  6. Bake for 35-40 minutes, or until golden on top.
Variations
  1. I enjoy altering this recipe for variety. Try adding bacon bits, pepper sauce, sausage, red peppers, or any other ingredient you find appealing. You may wish to substitute broccoli for the spinach for another alternative. For an additional flavor boost add two packets of Creamy Bacon Dressing from Glutenfree.com. If you prefer a more subtle onion or garlic flavor, lightly sauté them before adding to the mixture.
Note:
  1. These muffins tend to stick quite a bit in regular muffin tins, which is not only difficult to clean up, but also wastes a bit of each muffin. Using cupcake liners will keep your muffins from sticking, and make them a lot easier to grab when eating on the run.
