Instructions
  1. Pre-heat oven to 350°F.
  2. In a medium saucepan, heat 3 cups liquid to a boil. (Use caution as milk can easily boil over.)
  3. In a separate bowl, mix together flour, corn meal, salt, and spices, and remaining cup of liquid. Whisk well to avoid lumps.
  4. Add mixture to boiling liquid and reduce to simmer for 5 minutes until thickened. Stir as needed.
  5. Remove from heat. Add butter, honey, molasses, and raisins. Mix well.
  6. Pour mixture into lightly greased baking dish. Bake at 350°F for 30 – 35 minutes, or until pudding has jellied. Pudding will thicken more as it cools.
  7. Serve with vanilla ice cream.
Variation:
  1. Before baking sprinkle 2 tablespoons minute tapioca on top of pudding to reduce formation of large bubbles in the milk film and to help the pudding set up more quickly.
