  1. Heat olive oil in a soup pot over medium heat, add onion, carrot, and celery, and cook until softened, 6 to 8 minutes, stirring often.
  2. Pour in broth and water, add bay leaf and chicken pieces, increase heat to high and bring to a boil. Reduce heat to medium-low and cook at a simmer, stirring occasionally, until chicken is cooked through, about 30 minutes.
  3. Meanwhile heat a little olive oil in a large nonstick skillet over medium heat, add the garlic, and cook, stirring often, until fragrant and just beginning to brown, about 2 minutes. Add the spinach, stir well to combine and sauté for 4 minutes until leaves are wilted. Add a little of the soup broth and continue to cook the spinach until tender.
  4. Remove cooked chicken from soup pot with tongs, remove meat from bones and cut into dice. Return chicken to pot, add the sautéed spinach, season with salt and pepper and cook 5 minutes more. Serve immediately.
