Instructions
  1. Using a large cooking pot, heat oil and onion, cooking for 2 minutes.
  2. Add 5 cups of the water. Set one cup aside for later use.
  3. In a small bowl, dissolve the miso in remaining 1 cup of water, stirring until completely blended.
  4. Add dissolved miso mixture to the pot, and bring to a boil.
  5. Reduce heat to simmer and add soy sauce, mushrooms and tofu.
  6. Simmer 5-10 minutes or keep in a crock pot on warm for several hours.
  7. Makes 6 servings (1 cup each)
Note:
  1. Besides the miso, sesame oil is the essential ingredient in this soup. If you don’t have sesame and try to make this soup with another oil, it is not going to taste the way it should.
