Instructions
  1. Preheat the oven to 350 °F. Lightly coat an 8-inch square baking pan with cooking spray.
  2. In a medium bowl using an electric mixer beat together butter and honey on medium speed until well combined.
  3. Beat in eggs one at a time. Add vanilla, maple, and applesauce and beat for 1 minute more.
  4. In another bowl whisk together sugar substitute, flour, baking powder, baking soda, cinnamon, cloves and ginger.
  5. Add flour mixture to wet mixture in two batches, beating well to combine after each addition.
  6. Spread evenly in prepared pan and bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool on a wire rack before cutting and serving.
Notes:
  1. *Gluten-Free Flour Blend: Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Store in container with tight-fitting lid; stir before using. Makes 3 cups.
