Instructions
  1. Pre-heat oven to 225°F.
  2. In a large bowl combine nuts.
  3. In a smaller bowl combine all the spices and salt. Set aside.
  4. Beat the egg whites until foamy and add sugar. Beat until shiny and slightly stiff.
  5. Fold in the spices.
  6. Add the egg white mixture to the nuts, folding with a spatula until nuts are all coated.
  7. Turn evenly onto parchment lined cookie sheet, a single layer thick.
  8. Bake 60 minutes, or longer if needed, stirring occasionally. Remove from oven when nuts are dry and golden. Let cool before serving.
  9. Serving size 1/2 cup.
