Instructions
  1. Pre-heat the oven to 350 F. Lightly coat a standard muffin tin with cooking spray.
  2. Place oats in a food processor and pulse until slightly broken down but still coarse. Add brown sugar, and baking powder and pulse to mix.
  3. Add remaining ingredients and pulse just to combine.
  4. Spoon batter into 6 of the muffin cups and bake until a toothpick inserted in the center comes out cleanly. About 20 to 25 minutes.
  5. Cool for 5 minutes in pan before removing and transferring to a wire rack to cool completely. Store in an airtight container.
