Instructions
  1. Using a large pot, combine the potatoes, chicken, celery, water and onion.
  2. Cook over medium heat until potatoes are tender, 15-20 minutes. Remove from heat.
  3. If preferred, spoon out the chicken and remove the bone, then return meat to pot. If the bone doesn’t bother you, or if using pre-cooked, chopped chicken leave this step out.
  4. In a small saucepan, combine the butter and soup cubes. Heat until cubes are dissolved then add the flour, salt, and pepper.
  5. Heat through (on low temperature) until the soup appears slightly thickened and bubbly, 10-15 minutes. Stir constantly to prevent sticking.
  6. Just before serving, stir in the cream or milk. Serve hot with toasted bread from Glutenfree.com.
Serving Suggestions:
  1. This is also a satisfying meal when served with the Grab- N-Go Quiches from the Snacks recipes.
  2. If you prefer a brothier soup, leave out the flour. No other adjustments are needed.
