Instructions
  1. Open 4 cups of canned pumpkin.
  2. In medium saucepan, melt the butter and lightly sauté the onion, and garlic.
  3. Remove from heat and stir in 1 cup of broth.
  4. Combine pureed pumpkin and sautéed mixture into food processor or blender. Puree until smooth.
  5. Pour the pureed pumpkin mixture directly into a large dutch- oven style pot. Add 1 cup of broth and stir well with a whisk.
  6. Put on low setting, simmer 20 minutes, stirring often to prevent scorching. Do not bring to a full boil.
  7. When hot, turn off the heat and add the cream. Stir slightly and very slowly, forming swirls. Serve immediately.
  8. Provide grated Swiss cheese and one of the following side items as garnish.
Serving suggestions: This pairs well with the following:
  1. Homemade cheese crackers
  2. Glutino Table crackers
  3. Muffins made from Muffin and Scone Mix
Note:
  1. The key to this soup being a main dish is the whipping cream. It also changes the texture if you use another substance. Have also tried half-and-half in this soup, but prefer the cream.
