Sift flour with salt and sugar, add butter and incorporate it into
flour until it is pea sized, add egg and 2-4 Tablespoon of ice
water. Mix just until mixture holds together when squeezed.
Wrap dough up in plastic wrap and refrigerate for 2-4 hours.
When you remove dough from the refrigerator, the moisture
should have distributed itself into the dough and now it is
ready to be rolled out. Use some extra flour and roll dough out
for the recipe you need it for.
