- 2 1/2 Cups All-purpose Gluten Free Flour
- 1 tsp salt
- 1 tsp Sugar
- 3/4 Cup Pastured Butter
- 3 Tbs water Ice cold
- 2 Dozen Cocktail beef franks Or slice up Applewood Farm Uncured Hotdogs
- 1/2 Cup Yellow mustard
- 3 Tbs Honey

Instructions
- In a medium mixing bowl, whisk together flour blend, salt, and sugar. Using a fork or pastry blender, cut Butter into flour mixture until mixture is a grainy consistency. Add enough ice water until holds together, and chill for 20 minutes.
- Preheat the oven to 400 °F. Line a baking sheet with parchment paper.
- In a small serving dish, stir together yellow mustard and honey. Set aside.
- Roll out dough on a floured surface to 1/8-inch thickness. Cut into 24 squares, and wrap each square around a cocktail frank. Place seam side down on the baking sheet.
- Bake for 15 to 20 minutes or until pastry is golden.
Notes:
- *Gluten-Free Flour Blend: Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Store in container with tight-fitting lid; stir before using. Makes 3 cups.

This looks good and easy. Could you use this dough for pepperoni rolls, just stuff pepperoni in them instead of the hot dogs?

You certainly can! You can also try to stuff it with mozzarella cheese or diced ham or any kind of ingredient you can think of 🙂
