  1. Pre-heat Oven to 375°F, lightly oil 2 baking sheets or pizza pans.
  2. Combine yeast, sugar and 100°F water, yeast will activate in about 5 minutes. When the yeast blooms add the olive oil.
  3. Combine the flours, salt , xanthan gum and baking powder.
  4. Add the bloomed yeast and eggs to the dry ingredients. Mixing very well.
  5. Divide the dough in half, this dough is more batter like, pressing it out onto the pans until it is thin and smooth.
  6. You can par bake the crust for 4-6 minutes, then add the toppings of your choice and continue to bake until the edges brown and the toppings are done 18-22 minutes.
