Instructions
  1. In a medium bowl beat together sugar, eggs, butter, and vanilla with an electric mixer for 1 minute or until well combined.
  2. In another bowl whisk together rice flour, cocoa powder and salt. Add this to the egg mixture and stir in with a wooden spoon, beating for 1 minute more.
  3. Transfer to a buttered 8 x 8 glass baking dish and spread to the edges. For 1000 watt microwave bake on 90% power for 6 minutes or until a toothpick inserted in the center comes out cleanly. (For lower wattage microwaves bake on High for 5 to 6 minutes.)
  4. Set brownies aside to cool. Meanwhile melt chocolate chips. Drizzle over brownies decoratively before slicing and serving.
Gluten-Free Flour Blend:
  1. Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Store in container with tight-fitting lid; stir before using.
  2. Makes 3 cups.
