  1. Heat olive oil in a soup pot over medium heat. Add onion, celery and carrot, and cook without browning, until softened, 8 to 10 minutes.
  2. Add broth, quinoa, and potato, increase heat to high and bring to a boil. Reduce to medium-low and cook at a simmer, stirring occasionally, for 10 minutes.
  3. Add zucchini, tomatoes, peas, and lima beans and continue cooking, stirring occasionally, until vegetables and quinoa are tender, about 10 minutes more.
  4. Season with salt and pepper, stir in parsley, and serve immediately.
