  1. Bring a pot of salted water to boil over high heat to cook the spaghetti.
  2. Heat the oil in a medium nonstick saucepan over medium heat, add the shallot, sprinkle with salt, and cook until softened, about 2 minutes, being careful not to brown. Whisk in the yogurt and cottage cheese, remove from the heat, and set aside.
  3. Cook the spaghetti according to the package directions. Transfer with tongs to the saucepan, adding a little of the pasta water to thin the sauce. Stir well to coat and add the freshly ground pepper. Taste for the addition of salt.
  4. Serve immediately sprinkled with the cheese.
