Instructions
  1. Pre-heat oven to 350°F.
  2. In a 13” x 9” baking dish, pour 8 ounces of the tomato sauce. Sprinkle with the oregano and garlic powder. Set this pan aside.
  3. Mash tofu with a fork. Stir in onion, celery, and eggs, soy sauce and 1 cup of the grated cheese. Mix well.
  4. Stir in the flour and mix very well. Mixture will be sticky (If very sticky, add a little more flour until the mixture is easy to handle.)
  5. Form small patties (palm sized or a little larger) and roll in a little of the extra flour, to prevent stickiness.
  6. Place patties in pan of hot oil. Fry the patties for 2 to 3 minutes on each side, or until firm and browned.
  7. In the baking dish containing the tomato sauce, lay the browned patties side by side, overlapping the edges.
  8. Continue this procedure until all the mixture is used up and layered in the casserole dish.
  9. Pour the remaining tomato sauce over the patties, and top with Parmesan. Top with the remaining grated mozzarella cheese.
  10. Bake at 350°F or until bubbly, about 20 minutes.
  11. Makes 16 patties.
  12. Serve with salad or favorite green vegetable.
