  1. Pre-heat the oven to 375°F and lightly oil a big baking sheet and your pizza pan.
  2. Place sliced potatoes in a bowl and drizzle with the olive oil, add the seasonings and toss well.
  3. Place the potato slices onto a roasting sheet and bake for 15-18 minutes, until they are soft and beginning to brown.
  4. Arrange the potatoes on your pizza pan, allowing them to overlap, and press them with your hands so they squish together.
  5. Add your toppings and bake until the toppings are done.
