  1. Place the almonds and walnuts into a food processor and gently pulse until coarsely ground. Add in the dates and almond extract and process until mixture just begins to come together.
  2. Add the raisins or cherries and pulse until just mixed. Roll out balls of mixture by the tablespoon and flatten gently to make a cookie shape. Chill for two hours and serve.
