  1. Heat oil in a nonstick skillet over medium-high heat. Add onion and carrot, season with salt and pepper, and cook stirring often, until vegetables have softened, about 6 minutes. Add garlic and cook a further minute.
  2. Stir in chicken pieces, tomatoes, broth, and beans. Reduce heat to low, cover and cook for 10 minutes, occasionally stirring. Uncover and continue to cook until mixture is thick and rich, about 5 minutes more. Spoon into bowls, top with the toasted crumbs, and serve immediately.
