It was two o'clock in the afternoon. For the first time in hours the house was silent.
The sound of stomping toddler feet was replaced by the quiet whisper of a cold winter's wind against my basement window.
My son laid asleep, down for his afternoon nap.
I laid my head down as I decide to take the opportunity to do the same.
Suddenly I heard a little voice calling from upstairs.
"Daddy, Mess!" I heard
I lifted my head up.
"Daddy, Mess!" I heard shouted again.
I ran upstairs and before I could open the door I knew something was wrong.
The terrible smell of diarrhea hit me so fast it was like I was punched in the face.
The mess wasn't contained to just his diaper. It was all over his pants and down into his socks and all over the crib.
Frustrated and concerned I put him in the bath and began to think of what the heck could be going on.
After months of diarrhea it seemed to have gotten worse.
I started to think of what he had been eating over the past few days.
For 3 days in a row we had delicious fresh French bread with dinner. Tasty, but loaded with gluten.
My wife is gluten-intolerant which lead me to think this could be the cause. Blood tests came back a few weeks after and confirmed that my son was gluten-intolerant too.
This experience set in motion a lifestyle change that myself and my family would have to make.
My name is Brandon and I'm a regular person just like you. The truth is that I don't have gluten intolerance, yet as you can see from my story, it has affected me in a very profound way.
I was forced (luckily) to live a gluten-free lifestyle to support my family and their needs.
When I first began cooking gluten-free this is what I (wrongly) believed:
1: I Thought gluten-free cooking meant cooking complicated meals that would take forever to prepare
2: I believed that gluten-free meals would never taste as good as the original gluten version.
3.. I was certain that gluten-free cooking meant eating plain, tasteless and boring meals.
4. I thought that gluten-free meals contain expensive ingredients that are almost impossible to find.
I've been cooking gluten-free meals for a long time now and I can say all of the above is not true. In fact, I now eat BETTER that I used to and it doesn't take forever.
The number 1 misconception I believed was that cooking gluten-free meals will never taste like the original version.
I couldn't have been more wrong.
I found it hard to find recipes that were super easy to cook, tasted great AND were gluten-free, so I set out to find someone who could create some for me. After all, I'm not a chef.
I enlisted the help of a professional Chef to help with the development of recipes that are specifically designed to be easy and quick to make.
Chef Liz Scott is a professional chef and graduated from the prestigious French Culinary Institute in New York City. She is the award-winning author of seven books on healthy cooking and eating and specializes in recipe writing and menu development for specialty diets such as gluten-free, sugar-free and dairy-free.
Chef Liz created the recipes for me and my family and they were awesome. As I started using the recipes I began to realize that I couldn't be the only person out there looking for these types of recipes.
I thought that, just maybe, I could share the recipes with other folks who needed them.
Together Liz and I developed The Best Easy Gluten-Free Recipe Series. This series is a collection of the best recipes that are hand-chosen and designed to provide you with meals that are easy to cook and taste absolutely delicious.
I challenged Liz to create the easiest gluten-free meals possible. I actually asked her to create recipes that were so easy to cook a toddler could make them.
Not literally, but you get the idea.
When first going gluten-free I found it difficult to find the ingredients I needed. It was quite frustrating to spend hours in the grocery store only to end up empty-handed or worse; with substitution ingredients that didn't work.
My requirement for Chef Liz was to make sure that every recipe contained ingredients that are easy to find. If I couldn't find it easily in the local grocery store than the recipe was rejected.
Time is tight and I didn't want to be wasting it in a grocery store looking for crazy ingredients that were next to impossible to find.
I wouldn't doubt that you can use some more free time as well.
