Oh, the beauty of only using the VitaMix and a baking dish. This is a great recipe for your tweener to make (if your tweener is anything like mine, anything to reduce the mess!) It’s quick and easy and you can dress it up when you serve it with shaved dark chocolate, whipped creme, or a caramel drizzle. Serve that at the great big grandparent and cousin family Sunday lunch and everyone will think you’re raising the genius child!

Ingredients
- 1 cup Pecans raw
- 3/4 cup white rice flour
- 4 Eggs organic/free range
- 2 cups hemp milk or soy or almond milk
- 1/3 cup Butter melted, or 1/3 cup oil
- 3/4 cup Maple syrup 1 cup if using oil
- 1 tsp. Vanilla extract 2 tsp. if using oil

Instructions
- 1..Preheat oven to 300 degrees F.
- Combine all the ingredients in a blender and puree until smooth. You might have to stop and scrape the sides of your blender to make sure your batter is mixed through. If your blender will not hold the entire mixture, just puree in batches and then stir. It doesn’t matter what kind of blender you use.
- Pour batter into a well greased 9 inch pie dish and bake for about an hour or until set. It can take up to an hour and a half to set. The pie makes its own subtle crust.
- Jazz up this simple pie with a drizzle of maple syrup, a dollop of cream or ice-cream and top with some crushed pecans or shaved dark chocolate.
