I can’t decide which is the better feature, the versatility of this recipe or the aroma of it wafting through the house for a few hours while they bake. I always keep these around. Or make a batch with a few drops of Siracha to charge up a cheese board.

Instructions
- Preheat oven to 200 degrees F.
- Whip egg whites to stiff peaks.
- Whisk in honey, salt and cinnamon.
- Fold in nuts.
- Spread on parchment/silpat lines baking sheets.
- Bake for 3-4 hrs., stirring once every hour.
- Bake until the nuts are light and crispy in texture.
