I have this one friend who occasionally invites us over for dinner. She has a catering business. I love it when she has us in. She’s a tremendous cook and dear friend. And she always makes everything so easy. We were there a few months ago and we’re sipping wine in the kitchen while the husbands are out in the garage making music. (Yes, I married a band guy!) I’m saying how I hope we haven’t put her out and she says, “Oh, I just did a shrimp curry,” like I would say, “Oh, I just went by the ATM.” Turns out it is easy, delicious, gluten free and paleo (if your band guy leans that way!)

Instructions
- In a large saucepan, heat oil
- Sauté garlic and onion over low heat until tender, about 10-15 minutes
- Add tomatoes, ginger, cumin, coriander and turmeric; simmer for 5 minutes
- Place shrimp in simmering sauce and cook for 10 minutes until cooked through
- Stir in cilantro
- Remove from heat, add lime juice
- Serve
