- 1 cup Tapioca Flour
- 1 cup Sorghum flour
- 1 cup Potato Starch
- 1/2 cup Brown Rice Flour
- 1/2 cup Millet Flour
- 1 tbs Baking Powder
- 1 tsp Xanthan Gum
- 1 tsp salt
- 3 tbs Sugar
- 1 1/8 cups 100°F water
- 1 tbs Yeast
- 2 tbs olive oil
- 2 Eggs beaten

Instructions
- Pre-heat Oven to 375°F, lightly oil 2 baking sheets or pizza pans.
- Combine yeast, sugar and 100°F water, yeast will activate in about 5 minutes. When the yeast blooms add the olive oil.
- Combine the flours, salt , xanthan gum and baking powder.
- Add the bloomed yeast and eggs to the dry ingredients. Mixing very well.
- Divide the dough in half, this dough is more batter like, pressing it out onto the pans until it is thin and smooth.
- You can par bake the crust for 4-6 minutes, then add the toppings of your choice and continue to bake until the edges brown and the toppings are done 18-22 minutes.
