Ingredients
- 1 cup Buckwheat flour
- 1/2 cup Almond Flour
- 3/4 cup Rice Flour
- 1 tsp Xanthan Gum
- 1/2 tsp Baking Powder
- 1/2 tsp salt
- 2 tbs Sugar
- 1 stick Unsalted butter chopped and chilled
- 1/4 to 1/2 cup Ice water

Instructions
- Sift flours with xanthan gum, baking powder, salt and sugar. Add butter and incorporate it into flour until it is pea sized, add ice water. Mix just until mixture holds together when squeezed.
- Wrap dough up in plastic wrap and refrigerate for 2-4 hours. When you remove dough from the refrigerator, the moisture should have distributed itself into the dough and now it is ready to be rolled out. Use some extra flour and roll dough out for the recipe you need it for.
