If you are having (or taking to) a fancy cocktail party, these are ideal finger foods that pack flavor and protein. If you are throwing a dinner party put these on your dessert cheese tray with some grapes and nuts and serve an after dinner port. And if you are having the girls over for afternoon book club and ‘discussion’ (my husband says that’s code for gossip) you really can’t beat Aunt Lida Jane’s standard. She always served a scoop of chicken salad alongside spring greens drizzled with lemon vinegarette and Club Crackers. Club Crackers are a big Gluten NoNo. So swap in these dates for a little more upscale experience for the gals. (Beehive hairdo optional.)

- 1 cup pistachio nuts shelled
- 1/4 cup Orange Juice freshly squeezed
- 1 tsp. Orange zest
- pinch Celtic sea salt
- 20 dates large

Instructions
- In a food processor , pulse pistachios, orange juice, orange zest and salt
- With a sharp knife, make a slit on one side of each date and remove the pit
- Push a teaspoon of pistachio paste into each date; gently squeeze closed so that filling spills over
- Serve
