You know, it’s crazy we work all week looking forward to the weekend only to find it is equally exhausting — just not with the boss glaring out of the cubicle. And our family gets extra, extra hungry with all the running around and sports. When you throw in the teenager food factor (why do they travel in packs??) we need hearty food for many mouths in a hurry. Reading the name of this recipe takes almost as long as it does to prep it for the oven. And you know what, you can drag out the china for this but it looks just fine on a paper plate, too! Leftovers make a fine Sunday brunch and can be folded into an omelet.

Ingredients
- 1 pound Ground Boar Meat Try to get organic, pastured
- 2 tsps Minced garlic
- 1 tsp Oregano
- 1 tsp Cumin
- 1 tsp dried parsley
- 1 tbsp Butter Local, Organic, Pastured when possible
- 4-6 strips Bacon Cooked, Organic-- black forest is wonderful!
- 1 pkg Sweet Potato Tots, Gluten Free Frozen (use frozen)
- 1/2 Cup Salsa Gluten Free, Hot as you like
- 1/2 Cup ricotta cheese you can omit or add more to your preference
- 1/2 Cup Gluten-free Parmesan cheese
- 4-6 Slices sharp cheddar cheese Works with shredded instead GF
- 1/2 Cup Feta Cheese Crumbled, GF
- 1 tbsp Coconut Oil To grease dish

Instructions
- Preheat Oven to 375 degrees F.
- On top of the stove, melt the butter and brown the boar sprinkling the spices in when about 2/3 cooked. Salt and Pepper liberally during cooking. Remove from heat.
- Grease a medium casserole dish with coconut oil -- bottom and sides. Sprinkle about a third of the Parmesan on the bottom. This forms almost a thin crust when cooked.
- Put a single layer of tots on the bottom of the dish on top of the parmesan layer.
- Layer in the boar, followed by a layer of Ricotta. Then layer remaining tots. Don't worry if this layer is sparse. make of layer of the Sharp Cheddar Cheese. Layer the strips of cooked bacon onto the Sharp Cheddar layer.
- Sprinkle the Feta crumbles very liberally all over the casserole. Top the Feta with Parmesan layer using the remainder of Parmesan.
- Bake 25 minutes or so. A quick sear under the broiler will give a crustiness to the top.
