Bread is one of the hardest things to substitute when eating gluten free. This gluten free bread recipe has a wonderful texture that tastes just like ‘real’ bread! It’s simple to make and the whole family will love it!

Ingredients
- 1 Cup water 110°F
- 1 Cup Milk 110°F
- 2 Tbs Sugar
- 2 Tbs Active dry yeast
- 1 Cup Rice Flour
- 1 1/2 Cups Tapioca Flour
- 1 Cup Cornstarch
- 3 Tbs Potato Flour
- 1 Tbs Xanthan Gum
- 1 Tbs Baking Powder
- 2 tsp salt
- 3 Large Eggs
- 1/4 Cups Butter Melted

Instructions
- Lightly oil a bread pan.
- Combine the water, milk, yeast and sugar. Allow the yeast to bloom.
- Combine the flours, xanthan gum, baking powder and salt.
- Add the eggs and butter to the bloomed yeast. Stir to combine and then add the flour mixture to make a thick sticky batter.
- Place dough in the bread pan, place in a warm place to proof for 25 minutes or until just doubled. You can use a spatula or wet fingers to smooth the dough.
- Bake in a preheated 350°F oven until the top is browned and the internal temperature is at least 200°F. About 30-40 minutes

My bread doubled OK but then it “oozed” on both sides and the top was very “bumpy” even though I did even it out with wet fingers.
Any ideas to correct this problem?

hi will try your recipe but need to omit some of the ingreadients the yeast and the xanthan gum, cant find glutin free yeast, but will try the recipe thanks.
