I grew up on the edge of a major US Air Force base that was constantly welcoming new families who had lived the world over. Pretty impressive stuff to this small town gal. A new Air Force family with a girl about my age moved into our neighborhood. As part of the get-to-know-you process, we were invited to their home for dinner. I don’t think I’ve ever seen my brother as disappointed as he was when their mom brought out the pudding. This was not the banana delicacy that graced my grandmother’s southern Sunday lunch table. There wasn’t even any whipped cream. And mama hissed at him he had to eat it. He did and thus was born a new love for our family– that york-shire (accent southernized and misplaced) pudding cup. Once we went gluten free, I thought this was lost for us. But this recipe solves that problem. Note: does not pair well with nana pudding.

- 1/2 Cup Rice Flour
- 1/2 Cup Tapioca Flour
- 1/4 tsp salt
- 2 Large Eggs
- 1 1/4 Cups Milk
- 3 tsp Butter Melted
- 1 tsp olive oil For greasing pans

- Preheat the oven to 450 °F
- Sift the rice flour and tapioca flour into a large bowl. Add the salt. Make a well in the center and drop in the eggs. Using a small whisk or wooden spoon, stir continuously, gradually drawing in flour from the sides, adding half the milk in a steady stream at the same time. When all the flour has been mixed in, whisk in the remainder of the milk and the cool melted butter. Allow to stand for 1 hour.
- Grease a hot deep bun pan with olive oil or beef drippings and fill up to half to two-thirds with the batter. Bake in the oven for about 20 minutes.
- Serve warm.

Since being diagnosed with Celiac disease, Yorkshire pudding is one of the things I miss the most. I can’t wait to throw a roast in the oven and finish it off with this gluten free version.
